Vegan Gyro

This Mediterranean falafel sandwich is made using fluffy pita, warm falafel, and tons of fresh vegetables before being topped with a drizzle of creamy vegan tzatziki sauce.

These vegetarian gyros are made using falafel as vegan gyro meat, and are filled with the most delicious vegetables.

You can use any type of tzatziki sauce, but if you're looking for a homemade option I highly recommend using this homemade tzatziki.

Ingredients

Labeled ingredients including: falafel, onion, tomato, tzatziki, cucumber, lettuce, chickpeas, and pita.

Pita: I love the light fluffiness that the pita adds to these pita gyros.

Falafel: Falafel is so good to use as vegan gyro meat and making a falafel gyro is equally delicious and hearty. The combination of the falafel and chickpeas are a really good way of getting protein into these vegan gyros.

You can make your own falafel at home or you can pick up a store-bought option. Be sure to check the deli area and the frozen foods section for options.

Chickpeas: This is another great way to add a bit of protein into this recipe and they help to make this vegan pita sandwich so delicious. They are also great when you're adding more substance when make a gyro vegan.

I like to season my chickpeas with a bit of olive oil, salt, pepper, and cumin and roasting them in the oven for about 5 minutes.

Lettuce: Any type of crisp lettuce will do the trick.

Tomatoes: I like using a nice sweet, juicy tomato in this gyro.

Cucumber: I like using long, thin slices of cucumber to add a bunch of fresh flavor.

Onion: I use a combination of freshly sliced red onion and pickled red onions for a bunch of good flavor.

Tzatziki: You can use store-bought or a homemade version of tzatziki.

Instructions

This vegan gyro recipe is really easy to make and is filled with so many delicious plant based foods.

Start by heating up the falafel and prepping the remaining ingredients while the falafel heats up in the oven or on the stovetop.

I prefer to warm my pitas up so I like to pop them in the oven or on the stovetop for about a minute at the tail end of the falafel heating up.

Combine all ingredients in the center of the pita and drizzle about a tablespoon of tzatziki on top. Then wrap the falafel, serve, and enjoy!

Top Tips

These are best when served right away, but if you're planning on saving them for later you'll want to be mindful about how you store them.

Store the falafel and chickpeas separately so they can be reheated without affecting the fresh, refrigerated ingredients.

Combine everything in the pita just before serving.

Ingredients
  

  • 2 pitas
  • 1 cup cooked falafel
  • ½ cup chickpeas
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1 cucumber sliced
  • ½ red onion thinly sliced or pickled
  • 2 tablespoon tzatziki

Instructions
 

  • Reheat the falafel in an oven or on the stovetop.
  • Wash and then prep all produce according to the ingredient list.
  • Once the falafel has been heated combine all ingredients in the center of the pita, fold the pita together, and serve.

Notes

These gyros are best when served right away. If you plan to store and serve at a later time I recommend storing the falafel separately from the other ingredients for reheating purposes, and assembling the gyros right before serving.
