Falafel Bowl

This dish is filled with nourishing vegetables and hearty falafel and is the perfect vegan and vegetarian salad recipe.

I am absolutely in love with this gorgeous vegan salad recipe!

It's filled with fresh, raw, colorful food, and its perfect if you're looking for a recipe with rainbow food.

This dish can be served as a falafel salad, a falafel plate, or a falafel platter, depending on your preference. It's all relatively the same and meets all of your recipe needs.

It's delicious when made fresh and also great for a vegan or vegetarian meal prep recipe! Simply store the salad dressing and falafel separate from the fresh veggies, and it keeps well in the fridge for several days.

Ingredients

Greens: I used water cress and radish microgreens in this recipe as the base. This article from Harvard has a great chart that shows us why using greens like water cress, helps to make this a healthy vegan salad!

Falafel: I love buying fresh falafel from Whole Foods Market, but you can also find it at most grocery stores near the deli section, or in the freezer section.

Cucumber: The sliced cucumber adds great substance and crunch to this vegan power bowl.

Pickled Red Onions: I used this recipe from one of my favorite food bloggers. The recipe turns out perfect every time!

Tomato: Any type of tomato will work perfectly.

Instructions

Start by preparing your pickled red onions and either making or heating up the falafel.

Wash and prep all veggies so everything is in an easy bite-sized piece.

Assemble all of your colorful food in a large bowl to create your plant based salad. Add a drizzle of the homemade vegan tahini dressing on top, toss, and serve.

Tips and Tricks

You can easily make this salad ahead of time. I would make the pickled red onions and the salad dressing in advance. You can also wash, chop, and prep the veggies in advance too!

If you don't have any falafel at home and need to add some vegan salad protein, you can use chickpeas or nuts instead.

This is already one of my favorite vegan salad ideas and vegan Buddha bowl recipes, but you can add any ingredients that you think would be good. I strongly recommend that if you remove ingredients, you add something of similar texture in its place to keep things fun and delicious.

Ingredients
  

  • 4 cups watercress
  • 1 cup falafel
  • ½ cup cucumber sliced
  • ½ cup tomatoes sliced
  • ¼ cup pickled red onions
  • ¼ cup tahini dressing see notes below for link to recipe

Instructions
 

  • Start by prepping your pickled red onions and heating up your falafel.
  • Wash and prep other ingredients according to the ingredient list above.
  • Assemble all ingredients in a large serving dish, add a drizzle of tahini dressing, mix well, and serve right away.
