This peanut butter chia pudding is an easy 5 minute recipe. It's full of creamy peanut butter and perfect for a meal prep or make ahead breakfast.

We use simple ingredients that you probably already have in your fridge and pantry to quickly whip together a delicious treat.

Ingredient Notes

Chia seeds: You can usually find this item in the "health" section of the grocery store. You can use black or white chia seeds.

Peanut butter: I recommend using creamy peanut butter in this recipe. Stir it well before adding it to your other ingredients.

Yogurt: Using a vanilla flavored yogurt will give you extra flavor with less ingredients.

Oat milk: Using oat milk as the milk of choice in this recipe helps to make things extra smooth and creamy.

Substitutions & Additions

Peanut butter: If you prefer to use a chunky peanut butter you can do that. I recommend using a little extra yogurt to balance things out if you opt for chunky.

You can also swap the peanut butter out for almond butter or any other nut butter if you prefer.

Yogurt: Though I typically use vanilla yogurt in this recipe you can also use a different flavor. Some options that might work well with this recipe are berry flavors, strawberry banana, or rhubarb.

Oat milk: You can swap the out milk out for any milk that you like best. Some other options would be regular milk, almond milk, or coconut milk.

Top Tip: Stir the mixture together immediately after pouring the oat milk into the rest of the ingredients. If you don't do this, the chia seeds will form clumps that are hard to break up.

Step by Step Instructions

Step 1: Gather all of your ingredients. Combine everything in a large container or divide the ingredients into several smaller containers.

Step 2: Mix everything together really well for about 10-15 seconds immediately after combining the ingredients. Wait about 2 minutes then mix everything again.

Step 3: Cover the container(s) and place it in the refrigerator for at least an hour or ideally overnight.

Step 4: Wait until the chia seeds have absorbed the liquid and a thick, pudding-like consistency has formed. Remove the chia pudding and stir one more time before serving if needed.

Expert Tips

  • Stir well and stir often: It's critical to stir the ingredients really well once you add the liquid to the other ingredients. It's equally as important to wait about two minutes and stir again to break up and clumps.
  • Measure the ingredients: I'm often guilty of not properly measuring ingredients when making a recipe. Sometimes you can get away with that but this recipe relies on the perfect amount of chia seeds and liquid to make a pudding-like consistency. I highly recommend you use your measuring devices!

Keep the chia pudding in a covered container in the refrigerator for 1-2 hours. This will give the chia seeds enough time to absorb the oat milk and form that desired pudding-like consistency.

How long can this chia pudding last in the fridge?

You can store this recipe in a covered container in the refrigerator for 4-5 days on average.

Can I freeze this peanut butter chia pudding?

Yes! You can freeze it in a covered air-tight container for up to one month.

Ingredients
  

  • 1 cup oat milk
  • ¼ cup vanilla yogurt
  • ¼ cup chia seeds
  • 2 tablespoon peanut butter

Instructions
 

  • Combine all ingredients in 1-2 cups or containers and mix everything together for about 10-15 seconds.
  • Wait about 2 minutes then stir everything again, breaking up and clumps of chia seeds that might be forming.
  • Cover the container and place it in the refrigerator for at least an hour or until a thick pudding-like consistency has formed.
