Peanut Butter & Jelly Overnight Oats

These peanut butter and jelly overnight oats are an easy five minute recipe. They are made with creamy peanut butter, sweet jelly, and nourishing chia seeds and oats.

Ingredient Notes

Oats: Rolled oats or old fashioned oats will work best in this recipe. I don't recommend using steel cut oats because they will need a different amount of liquid in order to make the consistency correct.

Chia seeds: Adding chia seeds to these overnight oats is a great way to get extra nutrients and texture.

Yogurt: Vanilla yogurt is used to give these oats a little extra flavor and a creamier texture.

Peanut Butter: You can use either creamy or chunky peanut butter.

Jelly: Any flavor of jelly or jam that you like best will work great in this recipe.

Oat Milk: Oat or almond milk is a great choice for this recipe to make it extra creamy.

Substitutions & Additions

Yogurt: You can use any flavor of yogurt if you don't have vanilla. A berry flavor to compliment the flavor of jelly you use is a great way to amplify flavors.

Milk: The recipe originally calls for oat milk but you can use almond milk, coconut milk, or any milk that you like best.

Fresh berries: Stirring in fresh or frozen berries or adding them on top is a great way to add even more flavor!

Top Tip: Make sure to stir the overnight oats for a second time after 2-3 minutes. This helps to prevent clumps of chia seeds from forming and allows them to properly absorb the oat milk.

Step by Step Instructions

Step 1: Combine all ingredients in a jar or bowl. If you plan to meal prep, split the ingredients into two separate jars.

Step 2: Stir everything together until well combined. Make sure to scrape up the chia seeds and oats near the bottom of the jar.

Step 3: Wait 2-3 minutes then stir again to break up any clumps of oats or chia seeds that might have started to form.

Step 4: Cover and place in the refrigerator for at least an hour or ideally overnight until a thick consistency has formed.

Expert Tips:

  • Use a creamy peanut butter: This will help make the texture and consistency extra creamy. Using a dry peanut butter will make it difficult to stir.
  • Stir the oats well: The oats and chia seeds have a tendency to clump together. By stirring everything well initially and again after 2-3 minutes, the clumps won't have an opportunity to form.

These oats can be stored in a closed/covered container in the refrigerator for up to 5 days.

Do you use creamy or chunky peanut butter in these oats?

You can use either creamy or chunky peanut butter. If you prefer more of a crunchy texture, go with the crunchy nut butter. Though this recipe does classically call for creamy peanut butter.

Topping Recommendations

These chia seed peanut butter and jelly overnight oats are perfectly delicious as-is. If you want to stir in or add anything extra on top, these are my recommendations:

  • Fresh fruit, especially one to compliment the jelly flavor you use
  • Granola
  • Chopped peanuts, almonds, walnuts, or pecans
  • Hemp seeds
  • Dried fruit
  • Maple syrup

Ingredients
  

  • ¾ cup rolled oats
  • 1 tablespoon chia seeds
  • 1¼ cup oat milk
  • ¼ cup vanilla yogurt
  • 2 tablespoon peanut butter
  • 2 tablespoon jelly

Instructions
 

  • Combine all ingredients in a jar and mix everything together until well combined.
  • Wait 2-3 minutes then stir everything again.
  • Cover the container and place it in the refrigerator for at least an hour or ideally overnight.
  • Stir once more before serving, top with any fresh fruit or desired toppings, and enjoy!
