Kale Avocado Smoothie

This green smoothie is filled with fresh, whole foods, and is one of my favorite easy vegan smoothie recipes!

This avocado smoothie recipe is so light and refreshing, it's my number one go-to green smoothie and creamy green smoothie bowl.

It's perfect for the warmer months if you're looking for a lighter breakfast or a refreshing snack. This is also a great recipe if you're looking for a quick frozen dessert.

Ingredients

All ingredients are laid out and labeled, including: kale, pineapple, oat milk, lemon, avocado, banana, and cucumber.

Kale: I really like using kale as my leafy green in this recipe. You are more than welcome to swap the kale for another leafy green like spinach. You can even get a little wild and use both to make a kale and spinach smoothie, yum!

Avocado: This is one of my favorite avocado recipes and avocado smoothie recipes! The avocado adds so much delicious creaminess and smoothness. It also adds a ton of vitamins and minerals, check out this article to learn about the health benefits of avocados.

Banana: I almost always add a frozen banana to my smoothie recipes. I do this because it adds a ton of sweetness and creaminess. Using frozen banana will also help you create a thick smoothie or thick smoothie bowl that you can eat with a spoon.

Pineapple: The frozen pineapple is another ingredient that greatly contributes to the sweetness and creaminess of this smoothie.

Cucumber: Hear me out with this one... This was the first time I've added cucumber to a smoothie and it was amazing! It adds so much refreshing flavor, it's my new favorite refreshing smoothie tip.

Lemon Juice: I always recommend using freshly squeezed lemon juice because of how much better it tastes. The lemon really brightens up this entire recipe.

Oat Milk: I have been leaning much more toward oat milk as the liquid base of my smoothie recently. You can easily swap the oat milk for any other plant based milk, coconut water, or even regular water if you would like.

Instructions

Step 1: Combine the kale and oat milk in a high-speed blender.

Step 2: Blend until you don't have any large chunks of kale. If you're really crunched for time, you can skip this step and start at step 3, but it really makes a big different in my opinion.

Step 3: Add all remaining ingredients to the blender.

Step 4: Blend until everything is smooth and creamy.

Tips & Tricks

This smoothie is already vegan, gluten-free, and filled with delicious fruits and vegetables. You can always add anything that you feel would make it even more delicious, or leave out any ingredients that you don't love.

If you want to bring this smoothie to work for an easy work snack, place a stainless steel tumbler or travel mug in the freezer for at least 5 minutes. Pour the smoothie in after blending, and your smoothie will still be nice and cold at snack time.

If you make too much, pour any extra into an ice cube tray and place in the freezer. The next time you make a smoothie, add the frozen smoothie cubes to the blender.

Equipment

  • Blender

Ingredients
  

  • 1 cup kale
  • 1 banana frozen
  • 1 cup oat milk
  • ½ cup pineapple frozen
  • ¼ cup avocado
  • ¼ cup cucumber
  • 1 teaspoon lemon juice
  • ½ cup ice

Instructions
 

  • Combine the kale and oat milk in a high speed blender and blend until you no longer have large pieces of kale.
  • Add the remaining ingredients and blend until you've reached a smooth and creamy consistency.

Notes

I always recommend freezing the fruit for your smoothies in advance. This helps to make the smoothie extra creamy and frozen.
If you prefer a thicker smoothie, I recommend using less oat milk. If you want it to be less thick, use a little extra oat milk.
Can substitute your favorite leafy greens for the kale and can substitute your favorite plant-based milk in place of the oat milk if you don't have any on hand.
