Lentil Tacos

These savory lentil tacos are filled with nourishing green lentils and crisp, refreshing vegetables.

I love these vegan tacos because they have so much naturally delicious flavor.

I also love any excuse to add lentils into my diet and for vegan taco meat lentils are absolutely perfect!

To top things off, these tacos are as delicious as they are beautiful. The fresh vegetables in these plant based tacos are so pretty you don't even need to add a garnish.

Ingredients

Labeled ingredients including: seasoning, oil, avocado, lentils, cabbage, lettuce, onion, radish, cilantro, tortillas, jalapeno, and tortillas.

Tortillas: I used classic vegan flour tortillas in this recipe but feel free to use your favorite tortillas or any that you already have on hand.

If you're feeling extra ambitious you can even make your own tortillas!

Lentils: I used green lentils here in this vegan taco meat recipe. Check out this article about how to cook lentils and for some great tips to get them just right. You can use red lentils to make red lentil tacos if you prefer, just follow the package instructions so the texture comes out just right.

I really like making lentil taco meat as a vegan alternative because they are a great plant based source of protein when used as plant based taco meat.

Pickled Red Onions: I love making my own pickled red onions. Not only are they full of delicious flavor, but they add the most gorgeous pop of color.

If you need a recipe, be sure to try this one for easy homemade pickled red onions.

Vegetables: I used a combination of pickled red onions, radishes, avocado, jalapeño peppers, lettuce, and cilantro.

Feel free to add any veggies you love and remove any that you don't love.

Seasoning: To keep things simple, I used store bought taco seasoning. I went with a spicy seasoning for these tacos but use whatever level of spiciness you like best.

I always start by washing and prepping my vegetables.

Next, you'll want to cook your lentils according to the package instructions. At the end of cooking the lentils when there is just a bit of water left to be absorbed, add the taco seasoning and mix it into the lentils.

Allow the cooked lentils to cool slightly, then arrange all ingredients on the tortillas and enjoy!

Substitutions and Additions

If you don't want to use lentils, you can use beans or can make these Beyond Meat tacos instead by simply swapping out whatever you prefer in place of the lentils.

You can also mix and match the veggies and toppings on these vegan lentil tacos.

Remove any veggies that you don't like or don't have on hand and add in a new topping for every topping you remove.

Ingredients
  

  • 4 tortillas
  • 1 cup cooked green lentils
  • 1 cup lettuce shredded
  • ½ cup red cabbage shredded
  • ¼ cup radishes thinly sliced
  • ¼ cup pickled red onions
  • 1 tablespoon jalapeno peppers thinly sliced
  • 1 tbsp taco seasoning
  • 2 tablespoon cilantro to garnish

Instructions
 

  • Start by cooking the lentils according to package instructions. After they have finished cooking, mix the taco seasoning with 1 tablespoon water and mix into the lentils until the flavors are evenly distributed.
  • While the lentils are cooking, prep the veggies according to ingredient list.
  • Heat the tortillas one at a time on a pan over medium heat for about 30 seconds on each side.
  • Assemble the tacos by adding a layer of lettuce to each tortilla followed by the lentils and then the remaining ingredients.

Notes

If you plan on saving these tacos for later, store the cooked lentils, tortillas, and raw ingredients in their own containers to make reheating much easier.
