Air Fryer Breakfast Potatoes

These crispy air fried potatoes are tossed in fresh herbs, flavorful seasoning, and spices, making them the perfect breakfast side dish.

What I love about these crispy breakfast potatoes:

  • The entire recipe is made in just 20 minutes
  • This recipe is easy to follow and at a beginner level for home cooks
  • You can make these potatoes in advance and meal prep for easy breakfasts all week long!

Ingredient Notes

Labeled ingredients including: salt and pepper, potatoes, spices, fresh herbs, and olive oil

Cornstarch: I used cornstarch in this recipe to make a crispy coating. See below under, "recipe adjustments" for an alternative.

Fresh Herbs: I opted to use fresh rosemary and thyme in this recipe. You can spice things up (pun intended) and use any of your favorite fresh herbs. Basil would be another favorite!

Olive Oil: Extra virgin olive oil was used in this recipe, but you can swap for any other high-heat neutral oil like avocado oil if you prefer.

Potatoes: Russet Potatoes are my top potato choice for this recipe.

Step by Step Instructions

Start by preheating the air fryer. Make sure it is clean and empty, then turn it to 400 degrees Fahrenheit and turn it on. Let it pre-heat for at least 2-3 minutes. This will help your potatoes have a crispier texture.

Next, you will want to wash the potato. If you plan on keeping the outer skin on, scrub it with a brush. You can also peel the potato if you wish, but I would still recommend giving it a good wash.

Then prep your ingredients by dicing the potato into about ½ inch cubes and finely chopping up your fresh herbs.

Tip: The larger you make your diced potatoes, the longer they will take to cook. If you prefer larger pieces, add a couple extra minutes to your cook time and check frequently toward the end of cooking.

Next, toss the potatoes into a mixing bowl and add in all of the ingredients including the olive oil, cornstarch, herbs, and spices. Mix everything together really well so the potatoes are well coated.

Transfer the breakfast potatoes in air fryer and cook at 400 degrees for about 14 minutes or until they have reached your desired level of crispiness. Pause the air fryer at the 7 minute mark to remove the basket of the air fryer and give the potatoes a little toss.

Allow the fried breakfast potatoes to cool slightly before serving.

How to Serve Breakfast Potatoes

Have fun and get creative when serving and enjoying your air fryer roasted breakfast potatoes!

I typically like to serve these vegan breakfast potatoes as a side dish. They pair great with a nice hearty avocado toast, Easy Vegan Pancakes, or in a plant based breakfast burrito.

You also don't have to limit these flavorful potatoes to breakfast or brunch. They are a great dinner side dish and amazing when served with a power bowl of any kind.

Recipe Adjustments

Add Onions: You can make these breakfast potatoes with onions by simply adding diced yellow or sweet onion to the potatoes. Depending on how cooked you like the onions, you can also add them in at the halfway point when you take the potatoes out for a quick toss.

Make them Extra Crispy: If you're looking to make these breakfast potatoes crispy as crispy gets, add an extra teaspoon of cornstarch. This will create a little more of a crispy outer layer.

Pro Tip: If you have extra time, pre-dice your potatoes and allow them to soak in a bowl of ice water for at least 30 minutes. This will give them a softer inside and crispier outside!

Don't Have Cornstarch? If you don't have any cornstarch on hand, you can either omit it, or use 1 tablespoon of all purpose flour in its place. If you do swap for flour, be aware that this recipe will no longer be gluten-free.

Different Potato Choice: You can change things up and use Yukon Gold potatoes, baby potatoes, or any other potato that your heart desires. Note that this recipe is specifically tested with Russet Potatoes and if you use a different type of potato, you might need to adjust your cooking time.

Can I use sweet potatoes? Yes! You can absolutely make these air fryer sweet potatoes instead of regular potatoes. The might need to be air fried for a couple extra minutes, so test them at 14 minutes and adjust the time as necessary.

Don't have an Air Fryer?

No air fryer? No worries!

If you're interested in purchasing an air fryer, this is the one I have.

If you're not planning on buying one, here are some other cooking options:

Breakfast Potatoes Skillet Method:

Follow the same ingredients for the original recipe.

Once the potatoes are diced, transfer them (without seasonings!) to a pot of cold water and bring to a boil. Boil for about 5 minutes, then carefully drain them, and add them to a skillet.

Toss them in the oil, spices, herbs, and cornstarch, and cook over medium/high heat for about 6-8 minutes, or until they have reached your desired level of crispiness.

Breakfast Potatoes Oven Method:

Preheat the oven to 425 degrees Fahrenheit.

Toss the diced potatoes in the oil, cornstarch, spices and herbs, and transfer to a nonstick baking sheet.

Roast in the oven for about 20 minutes (toss them halfway through cooking), or until they have reached your desired level of crispiness.

Note: Just as if you were to make these home fries in air fryer, allow them to cool slightly before serving.

Ingredients
  

  • 1 russet potato diced
  • 1 tbsp olive oil extra virgin
  • 1 ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ tsp cornstarch
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 1 Tbsp fresh herbs I used thyme and rosemary

Instructions
 

  • Start by preheating your air fryer at 400 degrees for 3 minutes.
  • Prepare your ingredients by washing the potato and finely chopping the fresh herbs.
  • Combine all ingredients in a mixing bowl and toss until the potatoes are well coated.
  • Place the potatoes in the air fryer and cook for a total of 14 minutes or until your potatoes have reached your desired level of crispiness. Pause the air fryer halfway through cooking to toss the potatoes.
  • After cooking remove the breakfast potatoes from the air fryer and allow them to cool slightly before enjoying.

Notes

I prefer my breakfast potatoes on the saltier side, salt/season to taste if preferred. 
The larger you make the diced potatoes, the longer they will take to cook. For this recipe I diced my potatoes in about ½ inch cubed. 
These potatoes can be stored in the fridge in an airtight container for up to 5 days.
