This flavor-packed Greek salad is filled with crisp lettuce, fresh vegetables, savory olives, and a homemade Mediterranean dressing.

Ingredient Notes

Labeled ingredients including: chickpeas, cucumbers, olives, tomatoes, vinaigrette, basil, lettuce, and onion

Lettuce: I used green leaf lettuce in this salad but you can use any lettuce that you like best or have on hand.

Chickpeas: This chickpeas in this chickpea Mediterranean salad give us a great and delicious sources of plant based protein.

If you're using canned chickpeas, be sure to drain them and rinse well before adding them to your salad.

Onion: I prefer the zing of freshly sliced red onion in this salad.

Olives: I used a combination of Kalamata and black olives in this salad, feel free to use both or either one.

Cucumbers: The cucumbers are another great way to add texture and fresh flavor to this dish.

If you need help choosing a cucumber, this article goes over several different types of cucumbers.

Fresh Herbs: Adding a handful of fresh basil gives this dish an incredible burst of fresh flavor. You can swap for any fresh herb you like best such as dill or parsley.

Homemade Greek Dressing: This recipe includes a homemade vinaigrette, if you need to save time or have your own favorite recipe, feel free to use that instead.

Step by Step Instructions

Step by step instruction for how to make a Mediterranean Salad including: assemble ingredients, make vinaigrette, add to bowl, toss and serve

Whenever I make salads, I always like to start by mixing the homemade dressing. This allows for the flavors to meld while you prepare the rest of your salad.

After making the dressing, wash and prep your salad ingredients according to the ingredient list.

Combine everything in a large serving bowl and add the dressing to the top.

Gently toss the salad until well combined and coated in dressing.

Serve right away.

Substitutions and Additions

Chickpeas: This recipe calls for chickpeas, but you can swap them for any white bean.

You can also season and roast your chickpeas for a little extra flavor and crunch!

Vinaigrette: Though this recipe calls for a homemade vinaigrette, you can use a pre-made dressing if you need to save a little time.

Veggies: If you don't like any of the originally listed vegetables, you can swap any of them out for a different vegetable or more of one of the original vegetables.

I do highly recommend that if you take one out, you put one back in. This keeps this salad full of delicious textures and flavors.

Lettuce: I used green leaf lettuce in this salad, but you can use any salad green that you have on hand.

Pickled Onions: If you need another great burst of flavor, pickling the red onions is a great way to achieve this!

Is this salad vegan? Yes! This salad is 100% vegan/plant based, and is also gluten-free.

Can I make this salad in advance? Yes, simply store the dressing in a different/separate container from the rest of the salad. This will keep your salad crispy and will eliminate any sogginess.

Ingredients
  

  • 4 cups lettuce chopped
  • 1 cup tomatoes sliced
  • 1 cup cucumbers sliced
  • 1 cup olives pits removed
  • 1 cup chickpeas rinsed
  • ½ cup red onion sliced
  • ½ cup fresh basil roughly chopped

Mediterranean Salad Dressing

  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 2 teaspoon agave nectar
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Mix all ingredients for the salad dressing and set aside.
  • Wash and prep all salad ingredients according to the ingredient list.
  • Combine the salad ingredients with the homemade dressing in a large salad bowl and toss until well combined.

Notes

If you plan on making this salad ahead of time, store the salad dressing in a separate container to avoid a soggy salad.
