One Pot Spicy Fusilli

- ½ pound fusilli
- 1 tablespoon olive oil
- 6 cloves garlic minced
- 1 tablespoon tomato paste
- 4 roma tomatoes diced, about 4 cups
- 1 yellow onion diced
- ½ teaspoon crushed red pepper flakes
- 1 teaspoon salt
- ½ cup coconut milk
Pour the olive oil into a large pot and warm over medium-low heat. Once warm add the onion, stir, and cook for about 3 minutes stirring frequently.
Add the tomato paste and garlic, stir and continue to cook for another minute.
Add the diced tomatoes, salt, and crushed red pepper. Stir and cook for about 3-5 minutes until the tomatoes have softened.
Pour one cup of water and the uncooked fusilli into the pot. Stir everything together well, cover the pot, and allow to cook until the pasta is cooked to your liking - typically 10-13 minutes depending on the brand. Stir every 3-4 minutes to ensure the pasta is cooking evenly.
Once the pasta is fully cooked remove the pot from heat and stir in the coconut milk. Adjust the salt and crushed red pepper to taste and enjoy!
This pasta can be stored in the refrigerator in a covered container for up to four days.
