Flaxseed Pudding

This flaxseed pudding is creamy, light, and refreshing. It's perfect for an easy meal prep or make ahead breakfast, snack, or dessert recipe.

Ingredients

  • ½ cup flaxseed meal
  • ¾ cup oat milk
  • ¼ cup vanilla yogurt plant-based, sweetened

Instructions

  • Combine all ingredients in a jar or container.
  • Stir everything together until well combined. Wait three minutes and stir again to break up any clumps that are starting to form.
  • Cover the container and place it in the fridge for at least an hour to absorb the liquid and thicken.
  • Stir again after you remove it from the refrigerator and enjoy it cold.

Notes

Don't forget to stir the flax pudding again at the 3 minute mark to prevent clumping. 
You can adjust by adding more oat milk if you want a thinner consistency. 
I like to use sweetened vanilla plant-based yogurt to give sweetness and flavor. If you use unsweetened yogurt you can add a pinch of sugar or brown sugar.
