Tofu Satay with Peanut Sauce

Ingredients

  • 1 package extra firm tofu
  • 2 tablespoon olive oil

Marinade

  • 3 tablespoon low sodium soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 2 teaspoon chili flakes in oil
  • 2 teaspoon freshly grated ginger
  • 2 cloves garlic minced

Peanut Sauce

  • ¼ cup creamy peanut butter
  • ¼ cup low sodium soy sauce
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon lime juice
  • 2 teaspoon honey
  • 2 tsp sriracha
  • 2 teaspoon sesame oil
  • 2 tablespoon water

Instructions

  • Press the tofu for 15-20 minutes to remove excess liquid. While pressing the tofu, mix together the ingredients for the marinade and set it aside. Mix together ingredients for the peanut sauce and set it aside.
  • Cut the tofu into bite-sized pieces and assemble them on skewers. Then allow them to sit in the marinade for at least 5 minutes or longer if you have extra time.
  • Heat the olive oil in a pan over medium-low heat. Cook the tofu skewers for 2-3 minutes on each side or until they are golden brown.
  • Toss the cooked tofu in the peanut sauce, garnish if desired, and enjoy!

Notes

This tofu can be stored in the refrigerator for up to three days in a closed container.
