Peanut Sauce
- ½ cup peanut butter
- ¼ cup soy sauce low sodium
- ½ tablespoon freshly grated ginger
- 1 clove garlic minced
- 1 tablespoon sesame oil
- 1 teaspoon maple syrup
- ½ tsp sriracha
- ½ teaspoon crushed red pepper flakes
- 3 tablespoon cool water you can add more to thin the sauce further if desired.
Crunchy Mandarin Orange Salad
- 4 cups romaine lettuce chopped
- 1 cup red cabbage chopped
- ½ cup mandarin oranges
- ½ cup shelled edamame
- ½ cup carrots shredded
- ¼ cup peanuts chopped
- ¼ cup cilantro
- ¼ cup green onions chopped
- ¼ cup crunchy chow mein noodles
Start by mixing together all ingredients for the peanut dressing. Stir it until all ingredients are well combined then set aside.
Wash and prep all other ingredients according to the ingredient list.
Combine all ingredients in a large serving bowl and pour the desired amount of peanut sauce on top.
Toss the salad until everything is coated in the peanut sauce and serve right away.
If you plan to make this salad in advance and serve it later, store the peanut sauce and the crunchy chow mein noodles separately.
