Ingredients

  • 1 avocado
  • 1 cup basil
  • 2 garlic cloves
  • 2 tablespoon pine nuts
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Combine all ingredients in a food processor or blender and blend until smooth and creamy.
  • Serve over ½ pound of cooked pasta, fresh bread, or use as a dip for crackers or fresh vegetables.

This pesto can be stored in the fridge in an airtight container for up to 5 days. The top might brown because of the avocado, simply stir or scrape the top off before serving.
