Vegan Gyro

This plant based twist on a classic gyro makes the most delicious Mediterranean veggie sandwich that is full of fresh flavors.

Ingredients

  • 2 pitas
  • 1 cup cooked falafel
  • ½ cup chickpeas
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1 cucumber sliced
  • ½ red onion thinly sliced or pickled
  • 2 tablespoon tzatziki

Instructions

  • Reheat the falafel in an oven or on the stovetop.
  • Wash and then prep all produce according to the ingredient list.
  • Once the falafel has been heated combine all ingredients in the center of the pita, fold the pita together, and serve.

Notes

These gyros are best when served right away. If you plan to store and serve at a later time I recommend storing the falafel separately from the other ingredients for reheating purposes, and assembling the gyros right before serving.
