Raspberry Oatmeal

This berry oatmeal is a quick and easy vegan breakfast recipe that will keep you full until lunchtime.

Ingredients

  • 1 cup uncooked oats
  • ½ cup oat milk
  • ½ cup water
  • ½ cup raspberries fresh or frozen, or half of each

Optional Ingredients

  • 1 tablespoon maple syrup
  • ¼ cup fresh berries

Instructions

  • Cook the oatmeal on the stovetop using the water and oat milk. If you like your oats with a thicker or thinner consistency, adjust liquids accordingly.
  • In the last couple minutes of cooking your oats stir in your raspberries, maple syrup (if you want), and stir well, you will get a beautiful pink color! I like to stir in the frozen raspberries and use the fresh raspberries at the end to garnish.
  • Transfer to a bowl (or bowls), top and garnish with any preferred ingredients, and enjoy!

Notes

I use the frozen raspberries to mix into the oats for a better pop of color, but you can use fresh raspberries if you prefer.
You can use 1 tablespoon of maple syrup to sweeten your oatmeal.
