Lemon Pasta Sauce

This lemon pasta is deliciously savory and refreshing with just the right amount of zest.

Ingredients
  

  • 3 tablespoon olive oil
  • 2 cloves garlic medium
  • ½ teaspoon lemon zest
  • 3 tablespoon lemon juice
  • ¼ cup oat milk
  • ½ cup vegetable broth
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon corn starch
  • 2 tablespoon fresh basil or parsley

Instructions
 

  • Cook your pasta according to package instructions.
  • Combine the olive oil and minced garlic in a pan and cook over medium heat until fragrant (about 2 minutes) being careful not to let garlic burn.
  • Whisk all other ingredients together and then add to the pan. Cook over medium heat for about 15 minutes until the sauce reduces and thickens.
  • Strain your pasta and add it to the pot with the lemon sauce. Toss well, garnish with basil, and enjoy!

Notes

You can substitute the oat milk for cashew milk.
This recipe is best served with half a pound of pasta.
