Today's recipe is another refreshing salad to try this summer. The combination of greens, grains, and lemon is light and refreshing!
- 4 cups fresh baby arugula
- 2 cups cooked Israeli couscous
- 1 sliced cucumber
- ¼ cup extra virgin olive oil
- 2 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon maple syrup
- ½ teaspoon salt
- ½ teaspoon pepper
Wash and dry all produce.
Cook couscous according to package instructions. Once cooked, drain and rinse with cool water.
Add arugula, couscous, and cucumbers to a large serving bowl.
Mix together all dressing ingredients and pour over salad.
Toss salad and dressing, and enjoy!
