This salad is topped with fresh fruit and a lemon vinaigrette. It's a perfect addition to dinner on one of these hot summer nights.
- 3 cups fresh arugula
- ½ cup orange slices
- ½ cup grapefruit slices
- Fresh avocado slices
- 2 tablespoon chia seeds
- ¼ cup extra virgin olive oil
- 2 tablespoon fresh lemon juice
- ½ teaspoon freshly ground pepper
Wash and dry all produce.
Place arugula into a large serving bowl.
Peel fresh grapefruit and orange and place on salad.
Slice avocado and place in salad.
Mix dressing ingredients well and drizzle on salad.
Sprinkle chia seeds on top of salad.
Mix well and serve.
