These spicy peanut noodles are on the menu every week at my house! We love making “fakeaway” and I’ll jump at any opportunity to eat pasta. With the creamy peanut butter consistency and delicious spicy kick from the sriracha, it’s a hard recipe to beat.
Spicy Peanut Noodle Ingredients
- 1/2 pound pasta
- 1/3 cup creamy peanut butter (can sub for crunchy!)
- 1/4 cup low sodium soy sauce
- 1/4 cup cold water
- 1/2 Tbsp grated ginger
- 1 tsp rice vinegar
- 1 tsp maple syrup
- 1/2 tsp sriracha
- 1/2 tsp crushed red pepper flakes
- Optional garnish of peanuts, sesame seeds, green onions
Cook your pasta according to package directions. You can use your favorite type of noodles but I prefer to use spaghetti or pad Thai noodles. When your pasta has finished cooking drain, rinse with cool water, and set aside.
Mix together all of your other ingredients for the spicy peanut sauce. Once you’ve cooked and set aside your pasta, add the sauce to your pot and warm for about 2 minutes to slightly cook the garlic and thicken slightly.
Toss in your pasta and mix together until all of your noodles are coated in delicious creamy peanut sauce. Garnish, serve, and enjoy.
This recipe is also great for meal prepping! If you plan to save and reheat later, add a little water (a couple tablespoons) to revive and maintain a creamy consistency when you reheat.
In order to eliminate or dial down the spiciness, eliminate the sriracha and/or crushed red pepper.
