Refreshing Sesame Salad

This recipe for refreshing sesame salad is super healthy, crisp, and full of incredible flavor. This salad starts with a base of nourishing kale and is topped with a variety of crunchy vegetables and is finished with a light and refreshing sesame dressing.

One of my favorite parts of eating a vegan diet is exploring different vegetables. Watermelon radishes are still relatively new in my food repertoire and I love the flavor and bright, beautiful color they bring to the table. I also love preparing my veggies in different ways! In this salad I use spiralized cucumbers and carrot swirls (made using a vegetable peeler). It’s a great way to “spice up” vegetables I would usually put into a salad and makes them more exciting.

Sesame Salad

This salad serves 4

Refreshing Sesame Salad Ingredients

  • 4 cups kale
  • 1/2 cup thinly sliced cucumbers
  • 1/2 cup thinly sliced radishes – I used watermelon radishes
  • 1/4 cup shelled edamame
  • 1/4 cup shredded red cabbage
  • 1/2 cup carrot ribbons
  • 1/2 cup spiralized cucumbers
  • Cilantro to garnish
  • Sesame seeds to garnish

Sesame Dressing Ingredients

  • 3 Tbsp lemon juice
  • 1 Tbsp lime juice
  • 1 Tbsp sesame oil
  • 1/2 Tbsp low sodium soy sauce

Directions

Start by mixing your sesame dressing ingredients together and then set aside.

Wash and prep all ingredients according to your ingredients list, next assemble in a large serving bowl.

Add a splash of your sesame dressing, toss the salad, and serve right away.
