Green lentil tacos are a hot ticket item in our house right now! We get super excited about any new plant-based recipe, especially one this delicious. These tacos are filled with savory green lentils and fresh, crispy veggies!
I’ve been so excited that watermelon radishes are back in season and will use any excuse to sneak them into a recipe. They are deliciously spicy and add the most amazing pop of color to any meal. We love adding them onto salads, tacos, and power bowls for a great crunch.
This recipe makes four large tacos/two servings.
Green Lentil Taco Ingredients
- 4 medium tortillas
- 1 cup cooked green lentils
- 1 cup chopped lettuce (I used romaine)
- 1/2 cup thinly sliced red cabbage
- 1/4 cup thinly sliced radishes
- 1/4 cup pickled red onions
- 1/2 an avocado (sliced)
- 1 Tbsp thinly sliced jalapeño peppers
- 1 Tbsp taco seasoning
- Cilantro to top/garnish
Start by cooking the lentils according to package instructions. After the lentils have finished cooking, stir the taco seasoning into 1Tbsp of water and then mix into the cooked lentils until flavors are evenly distributed.
Heat the tortillas (one at a time) on a pan over medium heat for about 30 seconds on each side to toast slightly, then set aside to cool.
Assemble the tacos by adding a layer of lettuce to each tortilla followed by the lentils and then the remaining ingredients.
