Creamy pumpkin pasta is the perfect fall comfort food! It’s full of sweet and savory flavors and pairs perfectly with football on Sundays.
Pumpkin Pasta Ingredients
- 1 15oz can of pumpkin purée
- 1 small yellow onion (diced)
- 3 medium cloves of garlic (minced)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp nutmeg
- 1/4 tsp sage
- 1 tablespoon rosemary
- 2 tablespoons nutritional yeast
- 1 cup vegetable broth
- 1/2 cup water
- 1 tablespoon olive oil
- 2 tablespoons flour
- Serve with 1 pound of pasta
Add your olive oil to a large pan and turn to medium heat. Once warm, add your onion and garlic. Cook for several minutes until fragrant, stirring frequently.
Add in your remaining ingredients (except the pasta) and mix together. Continue to cook over medium heat for about 15 minutes. Blend with an immersion blender or let cool and use a blender. If you use a blender, be sure to slightly vent the top!
Serve warm pumpkin sauce over cooked pasta, garnish with fresh parsley if desired and enjoy!
