This salad serves 2.
Sweet Apple Salad Ingredients
- 4 cups baby spinach
- 1/2 cup of your favorite fall apples- thinly sliced
- 1/4 cup pecans (chopped or whole)
- 1/4 cup pomegranate seeds
- 3 Tbsp maple dijon dressing (recipe below)
Maple Dijon Dressing Ingredients
- Juice of 1 lemon
- 1 Tbsp extra virgin olive oil
- 1 Tbsp dijon mustard
- 2 tsp maple syrup
- 1 tsp apple cider vinegar
Start by mixing your maple dijon dressing ingredients together and set aside.
Wash your produce and add your spinach and sliced apples to a large bowl. Add your pecans and pomegranate seeds together with the salad. Be sure to stir your dressing again, and add a drizzle to the salad. Toss the salad well and serve immediately.
