After getting back to in-person work and back into more of a “normal” routine, I appreciate the ease and healthy comfort of a good power bowl. I prep my greens, grains, and dressings at the beginning of the week and can easily toss together a power bowl for lunch or dinner.



This recipe serves 2
Ingredients
- 2 cups baby arugula
- 1/2 cup cooked couscous
- 1/2 cup fresh tomatoes
- 1 Tbsp sunflower seeds
- 1 Tbsp pepitas
- 2 Tbsp dressing
Dressing Ingredients
- Juice of 1 lemon
- 1 tsp extra virgin olive oil
- 1 tsp dijon mustard
- 1 tsp apple cider vinegar
Directions
Mix together all dressing ingredients first and set aside.
Cook your couscous according to package instructions. I like to swap out the water for vegetable broth to give it a little extra flavor.
Wash and spin your arugula and wash your tomatoes. Dice your tomatoes and add to a large serving bowl along with your arugula, sunflower seeds, pepitas, and cooked couscous.
Add a drizzle of dressing, toss well, and enjoy!
