These August days are hot and deserving of a sweet, refreshing treat. My dragonfruit ice pops have a beautiful, rich color and a delicious, light flavor. Whether you’re enjoying one outside or while hiding in the air conditioning, this is the perfect end-of-summer dessert!
- 1 cup coconut milk
- 1/4 cup coconut water
- 1/4 cup dragonfruit OR 1 tsp dragonfruit powder
- 1 tsp maple syrup (or sub for 1 tsp organic sugar)
Add all ingredients to your blender and blend until well mixed and smooth.
Pour into your ice pop molds and freeze for a few hours.
Remove from pop molds as you are ready to eat each one. Sometimes it’s a bit tricky to get the pops out of the mold, I run some warm water over the mold for a few seconds and it makes it easy to slide the pop right out.
