When I think of summer produce, I think of the local farm stands scattered across town. Every day they set out fresh produce and if you’re lucky enough to stop by early enough, you can get some of the most delicious fruits and veggies! My avocado caprese salad is fresh, flavorful, and farm stand-inspired!
- 2 cups diced tomatoes
- 1 cup diced cucumbers
- 1 cup diced avocado
- 1 cup thinly sliced red onion
- 1/4 cup balsamic vinegar
- 2 Tbsp freshly chopped basil
- Salt & pepper to taste
Heat your balsamic vinegar in a pan over medium heat and bring to a boil. When it starts to boil, turn down and simmer for 10-15 minutes until it is reduced and thickens.
Wash all produce well and prepare according to ingredient list. Add all ingredients to a large serving bowl. Drizzle finished balsamic glaze over the top and toss.
