I’ve been making my own vegetable broth for a few months now and have been so impressed with the entire process. I feel so good about re-using my vegetables scraps and I end up with incredible new, delicious flavors every time.
- 1 large pot full of vegetable scraps
- 10 cups of water
- 1 Tbsp olive oil
- Salt & pepper to taste
This process can start weeks in advance or right away, depending on when your veggie scraps are ready. Whenever you prep your (washed) vegetables, save the ends of the veggies, vegetable peels, and whatever part you might normally throw away or compost. Put them in a reusable ziploc bag or container and freeze until you’re ready to use.
Heat your olive oil in a large pot over medium heat. Sauté the vegetable scraps for a few minutes, stirring frequently. Add the water and salt and bring to a boil. Cover and simmer for 1-2 hours. Season with additional salt and pepper to taste.
