I love roasting veggies and chickpeas in the oven and tossing them in a salad. It’s a great way to add a ton of texture, flavor, and protein while keeping things healthy and simple!
Ingredients
- 1 cup arugula
- 1/2 an avocado
- 1/4 cup roasted sweet potatoes
- 1/4 cup cucumbers
- 1/4 chickpeas
- 1 Tbsp pickled red onions
- 1 Tbsp ranch dressing
- 1/2 tsp olive oil
- 1/4 tsp cumin
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp salt and pepper
Instructions
Preheat oven to 425°.
Wash all produce well.
Toss your chickpeas and sliced sweet potatoes in olive oil, salt, pepper, cumin, and crushed red pepper. Roast in the oven for approximately 15 minutes.
Assemble your arugula in a serving bowl, top with you chickpeas, sweet potatoes, pickled red onion, and cucumber. Drizzle with ranch or dressing of choice and enjoy!
