Summer Rolls

These summer rolls are filled with fresh, crunchy veggies, and can make any day taste like summer!


  • 8 pieces of rice paper
  • 1 head fresh green leaf lettuce
  • 2 carrots (julienned)
  • 1 cucumber (julienned)
  • 1/2 cup thinly shredded red cabbage

Peanut Sauce Ingredients

  • 1/4 cup peanut butter
  • 1 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1/4 tsp sriracha
  • 1/2 clove garlic (minced)
  • Sesame seeds for garnish
  • 1 Tbsp cool water


Wash all produce.

Prepare your veggies as noted in the ingredients list.

Gently place your rice paper in a bowl of water for about 10 seconds. Place your rice paper on a clean surface and blot with a clean dish towel to remove any excess water. Layer the veggies on top of a leaf of lettuce and roll rice paper to enclose ingredients, similar to how you would assemble a burrito.

Mix together all ingredients for your peanut sauce.

Dip your rolls in the peanut sauce and enjoy!
