Kale Cucumber Smoothie

This is by far the most refreshing green smoothie I’ve ever had! The earthy flavor of the kale is so perfectly balanced by the lemon juice and cucumber, with the sweetest hint of pineapple. Enjoy this first thing in the morning, or as an afternoon pick-me-up!



  • 1 cup oat milk (can swap for any plant-based milk or coconut water)
  • 1/2 cup fresh kale
  • 1/4 cup cucumber (frozen)
  • 1/4 cup pineapple (frozen)
  • 1/4 cup ice
  • 1 tsp fresh lemon juice


Wash all produce.

If possible, freeze your pineapple and cucumber ahead of time to make your smoothie extra frozen and creamy.

Start by blending your kale and oat milk for approximately 30 seconds, this will help break the kale down so you don’t get big chunks in a sip.

Add the rest of your ingredients and blend together until you have a smooth consistency.
