These roasted vegetable tacos are nothing short of fantastic. With a hearty filling of roasted veggies, fresh veggies on top, and a drizzle of homemade chipotle sauce (also included in this post), you can make taco night any night!
Ingredients
- 1 portobello mushroom
- 1 bell pepper
- 1 sweet potato
- 1 jalapeño pepper
- 1/2 red onion
- 1/2 avocado
- 3 radishes
- corn tortilla
- 1 Tbsp taco seasoning
- 1/2 cup shredded lettuce
- 1 Tbsp chopped cilantro
- 1 Tbsp extra virgin olive oil
Homemade Chipotle Sauce Ingredients
- 1 cup non-dairy plain yogurt
- 1 chipotle pepper
- 1 Tbsp adobo sauce (you get this out of the jar with the chipotle peppers!)
- 1 tsp cumin
- 1 tsp lime juice
- 1 tsp lime zest
Instructions
Preheat your oven to 425°.
Wash all produce well.
Slice your onion, sweet potato, bell peppers, and mushroom into large slices. Toss with olive oil and taco seasoning and roast in the oven for approximately 15-20 minutes until veggies are soft and cooked throughly. Remove from oven and let cool slightly.
Assemble tacos in tortillas with a layer of shredded lettuce, your roasted veggies, and top with freshly sliced radishes, jalapeño, avocado, cilantro, and a drizzle of chipotle sauce.
