Autumn Salad with Apple Cider Vinagrette

This salad is as refreshing and crisp as a fall afternoon! Toss together some fresh kale, delicious toppings, and drizzle this seasonal vinaigrette on top for a delicious fall meal.


  • 3 cups fresh kale
  • 1 fresh apple
  • 1 fresh pear
  • 1/2 cup walnuts
  • 1/3 cup dried cranberries
  • 1/3 cup pomegranate seeds
  • 1/3 cup sunflower seeds

Apple Cider Vinaigrette Ingredients

  • 2 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 2 Tbsp coarse ground mustard
  • 2 Tbsp honey or maple syrup
  • 1 Tbsp fresh lemon juice


Wash and dry all produce.

Whisk together all vinaigrette ingredients and set aside.

Remove the ribs from the kale and chop into bite-sized pieces.

Assemble the kale with the remaining salad ingredients. Drizzle with your apple cider vinaigrette, and enjoy!
