As you carve your pumpkins into festive decorations this fall, be sure to set aside the seeds! Below is my favorite crunchy, savory autumn snack.
- 1 cup pumpkin seeds
- 1/2 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
As you carve your pumpkins, set aside the seeds in a bowl.
Preheat your oven to 400°.
Rinse your pumpkin seeds and pick out all pumpkin strings and chunks.
Toss your seeds in the olive oil and seasonings.
Spread evenly on a baking sheet and roast in the oven for approximately 30 minutes, tossing at the halfway point.
*watch closely to make sure they don’t burn.
