This recipe puts a delicious spin on classic caprese. With tomatoes deliciously in season, this is the perfect time to try this salad!
- 1 pound cooked cheese tortellini
- 1 cup fresh cherry tomatoes (halved)
- 1/2 cup fresh basil
- 1/4 cup pesto (or try my Avocado Pesto recipe)
- 1/2 cup fresh mozzarella
Wash and dry all produce.
Cook tortellini according to package instructions.
Combine tortellini, halved cherry tomatoes, basil leaves, and pesto in a large serving bowl and mix well.
Cover and refrigerate for at least one hour.
Serve and enjoy!
