Couscous Arugula Salad

Today’s recipe is another refreshing salad to try this summer. The combination of greens, grains, and lemon is light and refreshing!


  • 4 cups fresh baby arugula
  • 2 cups cooked Israeli couscous
  • 1 sliced cucumber

Dressing Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp pepper


Wash and dry all produce.

Cook couscous according to package instructions. Once cooked, drain and rinse with cool water.

Add arugula, couscous, and cucumbers to a large serving bowl.

Mix together all dressing ingredients and pour over salad.

Toss salad and dressing, and enjoy!
