This dessert is quick and easy to assemble, and great for a last-minute holiday dish!
- 2 pounds fresh strawberries
- 1/2 cup fresh blueberries
- 1 cup heavy cream
- 2 Tbsp powdered sugar
- 1/2 tsp vanilla extract
Start by washing and drying your strawberries and blueberries.
Slice the bottom tip of the strawberry off to make for a sturdy base so your strawberries can stand up on their own. Then remove the stem and carve a small dip into the strawberry that you will later fill with whipped cream. You can carefully use a knife to do this, or use a strawberry stemming tool (huller). Next we will make the homemade whipped cream. Combine your heavy cream, powdered sugar, and vanilla extract into a mixing bowl. Now mix using either an electric stand mixer, electric hand mixer, or use a whisk and mix by hand (this option is tough but I’ve done it!).
Mix for several minutes until your whipped cream has started to thicken, but be careful not to over-mix.
Pipe whipped cream into your strawberries, and garnish the top with 1-2 fresh blueberries.
Place in the fridge until you are ready to serve and enjoy!
