Let me give you another reason to love chickpeas! This flavorful summer side dish is a great and easy to bring to any gathering.
- 2 cups chickpeas
- 2 cucumbers
- 1/2 cup feta crumbles
- 1/2 cup chopped red onion
- 2 Tbsp fresh chopped parsley
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1 Tbsp red wine vinegar
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
Wash and dry all produce.
Finely chop your red onion.
Cut your cucumber in half lengthwise, then cut each half lengthwise one more time. Slice the middle seedy part of the cucumber off and discard. Finish chopping your cucumbers until the are pictured as shown above.
Mix together all of your dressing ingredients in a bowl and set aside.
Add all remaining ingredients into a large serving bowl, drizzle dressing on top and mix well.
Garnish with parsley.
