Fresh Food of the Month: Rainbow Carrots

Each month I want to feature a fresh fruit or vegetable on the blog! We can explore together and learn more about these delicious foods. This month we are featuring beautiful rainbow carrots!

Carrots are sweet and crunchy vegetable that are available year round, though they are technically in season each spring.

These veggies are usually known for their bright orange color, but can actually be found in several different colors! Surprise your guests the next time you host a dinner and show off the beautiful, natural colors of these unique carrots!

Featured Recipe: Honey Roasted Rainbow Carrots


  • 1 pound fresh rainbow carrots (you can use regular carrots in place of rainbow carrots)
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp honey
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Fresh parsley for garnish


Preheat oven to 400°.

Wash, dry, and peel carrots.

Place carrots on a baking sheet and drizzle with olive oil and honey. Season with spices and mix well with hands so honey and spices are evenly distributed.

Roast for 35 minutes or until softened and slightly browned.

Garnish with parsley.
