Did you grow up loving Poptarts as much as I did? It’s pretty much a dream come true to make my own Poptarts! I used my favorite jam and my favorite sprinkles and watched my childhood come back to life!
Ingredients
This recipe makes 4 Poptarts
For The Poptarts
- 2 pre-made pie crusts (refrigerated not frozen)
- 1/3 cup of your favorite fruit jam or jelly
- 1 Tbsp cornstarch
- 1 large egg
For The Topping/Icing
- 1 cup powdered sugar
- 1 Tbsp heavy cream
- 1 Tbsp fruit jam or jelly
- Sprinkles
Directions
Preheat your oven to 400°.
Roll out the refrigerated pie crusts and using a knife, cut out 8 rectangular pieces.
In a small bowl mix together the 1/3 cup of jam and the cornstarch.
On 4 of your rectangular pie crusts, spread out a spoonful or two of the jam mixture in the middle, leaving a border of approximately 2cm around the edges.
Beat the egg and brush it onto the 2 cm boarder of the pie crust edges.
Place the remaining 4 pie crust rectangles on top of the jam pie crusts and press around the edges with a fork to seal in the jam.
Place the Poptarts on a baking sheet lined with parchment paper and bake at 400° for approximately 15 minutes.
Whisk together the powdered sugar, remaining 1 Tbsp jam, and heavy cream. Add 1 tsp of cold water at a time if necessary to thin the icing a little.
Once your Poptarts have cooled, add the icing to the top and place sprinkles on icing before it hardens.
