Avocado Pesto With Zucchini Noodles

I’ve never been so happy before to eat a meal made almost completely from vegetables! This spiralized zucchini with avocado pesto is creamy, savory, and left us feeling completely satisfied at the end of the meal.

Grab your food processor and let’s get started!


  • 2 avocados (ripe and soft)
  • 4 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 3/4 cup fresh basil
  • 1/3 cup pine nuts
  • 3 medium cloves of garlic
  • 1/2 tsp salt
  • 1/2 tsp freshly ground pepper
  • 4 large zucchini
  • Fresh parsley for garnish


Start by washing and spiralizing your zucchini noodles and then set them aside along with the parsley and 1 Tbsp olive oil.

Add your remaining ingredients to your food processor and blend until you have a smooth and creamy consistency.

Add your remaining olive oil to a nonstick pan and heat up. Add your spiralized zucchini to the pan and cook for approximately 2 minutes, tossing frequently. It’s important not to overcook your zucchini noodles or they will become soggy.

Mix together your cooked zucchini noodles and avocado pesto. Add parsley for garnish and enjoy!

*You may also substitute the zucchini noodles for regular spaghetti noodles!
