With the weather warming up, it’s finally time for some springy treats. Lemon squares are so light, sweet, and refreshing! These are the perfect dessert for any springtime get-together!
Short Bread Crust
Ingredients
- 1 1/2 cup flour
- 3/4 cup powdered sugar
- 3/4 cup salted butter at room temperature
Instructions
Mix the powdered sugar and flour together in a bowl.
Mix in the butter until all ingredients are blended together, be sure not to over-mix.
Pat down evenly into a 9×13 pan.
Bake for 15-20 minutes at 350 degrees or until the crust is lightly browned, then remove from the oven and set aside.
Lemon Topping
Ingredients
- 5 large eggs
- 4 1/2 Tbsp freshly squeezed lemon juice
- 1 Tbsp lemon zest
- 5 Tbsp flour
- 2 1/4 cups sugar
Instructions
Combine eggs, lemon juice, and lemon zest and mix together.
Add the flour and sugar and mix until the sugar is “melted” into the rest of the mixture.
Pour over your short bread crust and bake in the oven for 25-30 minutes at 350 degrees.
Let cool, then move to the refrigerator for at least 12 hours before cutting.
Dust with powdered sugar and garnish with sliced lemons before serving.
